On being a Saucier in the kitchen. Arguably the best job, as you are in management, but always get to touch the food, which becomes more rare as you rise in the ranks and become more successful. It is cued to 5:25 to cover just the Saucier, but this whole piece will give a good understanding of how a kitchen works.
With respect to the creator, this is a particularly boring video, especially compared to the video above. This is a good example and comparison to see, in order to better understand the conflict that The Kid goes through in figuring out his path and journey in cooking.
The best of Bernard Loiseau. His energy particularly with the Mushroom Soup is what gets The Kid connected to food. It’s this energy he exudes in all the media that makes it so impossible to fathom him ending his own life.
A great doc for understanding the chef’s connection to food and
A look at a chef in the early part of his career. The Kid would have followed along this path, or aspired to if he had not stumbled down the path of the private chef. He would have cooked along side people who had reached this level of skill. This chef cooked in kitchens on the level of The Kid and with a high level of talent and intensity.
FLOATING is an piece written for The Kid’s trip to the airport with his drugs smuggled in Juicyfruit packs. Its about losing it, and pulling it back together, in NYC, in public. Inspired by Brian Eno’s Music for Airports, this could also be thought of as Music for Sumuggling MDMA in Airports.
The short film, 3rd Ave El. The purpose of this film included as reference is due to the nature of this being shot in NYC, and seeing the faces of the poeple on the street. Seeing what they’re doing and how they’re acting is part of the experince walking around in NYC. They/We are part of the fabric that makes up the city. We are engrained in the texture of the New York experience, physical and other.
